Happy National Chocolate Chip Day!

Hi guys! Happy National Chocolate Chip Day! In honor of this special day, we must make some chocolate chip cookies right? Here is my simple recipe, hope you all enjoy it!


Ingredients:

1 cup room temperature butter
3/4 cup granulated sugar
3/4 cup brown sugar
2 large eggs
2 tsp vanilla extract
2 1/4 cup unshifted flour
1 tsp baking soda
1/2 tsp salt
1tsp corn starch

Directions:

1. Pre heat oven at 375F
2.  Place room temp butter and sugar in one bowl and place unshifted flour, baking soda and salt in a separate bowl.
3.  Combine room temp butter and sugar, beat them in slow speed, do not over mix the mixture.
4. Slowly pour in eggs and vanilla extract.
5. Slowly pour in the dry ingredients little at a time into the butter sugar mixture and combine the mixture using a spatula. Do NOT use a mixer at this point because your cookies will not turn out chewy.
6. Baking time should vary between 10 min-12 min.
7. Let the cookies sit for about 10 mins.
8. Place the cookies on a rack and let them cool for about 10 mins.

Grandma's Dumplings

I learned this recipe from my grandmother when I was 14 years old and I have been making my dumplings the same way she taught me at the beginning.
I got all of my ingredients from my local chinese market.
I am sorry I do not have any measurements for this recipe as I would just eye ball it.

Ingredients(makes about 85 dumplings):
2lb grounded pork
1lb grounded pork fat
Salt
Black pepper
Sugar
Hoisin sauce
Soy sauce
Sesame oil
Dumpling wrap
Green onion (optional)
2 eggs for the meat mixture
1 egg for the dumpling wrap

Preparation:
Tips: In order to make flavorful dumplings, you should marinate the pork the night before cooking.

1. In a large bowl, mix both grounded pork fat and grounded pork together to give a moist filling for the dumplings.
2. Season the pork mixture with salt, black pepper, hoisin sauce, soy sauce sesame oil and a hint of sugar.
3. Add in one egg at a time into the pork mixture until it is well combined into the pork mixture.
4. Place the pork mixture in the refrigerator and let it sit overnight. 

Directions: 
1. Crack an egg in a small bowl and whisk it. The egg will help you hold each dumpling in place.
2. Scoop about 1tsp of pork mixture onto the dumpling wrapper.
3. Dip a chopstick into the egg mixture and touch half of the outer area of the dumpling mixture with your chopstick.
4. Start wrapping dumplings! Make sure you play some music or a movie as you wrap! It gets really tiring and boring! hahaha
3. Place the dumplings into the choice of your soup.
4. Pour the leftover egg mixture that you used to wrap your dumplings into the choice of your soup. (optional)
4. Sprinkle some green onion on top and serve! (optional)

Suggestions:
1. Feel free to mix in bak choy/ napa cabbage into the pork mixture if desire.
2. I served my dumplings in a soup that is made with bak choy and chicken broth.

What to do with leftover dumpling wrapper?
This random creation came into my mind since i refuse to waste food.
Easy crepe like dessert with a thin layer of buttery crispy crust outside and caramelized banana that will make you smile!

Ingredients (2 servings):
Dumpling wrapper
Sugar
Powdered sugar
1 banana
1 tsb butter

Directions:
1. Place banana slices on top of one dumpling wrapper, this will be your first layer.
2. Sprinkle some sugar on top of each layer.
3. Form 3 layers in total for each serving.
4. Melt 1tsb of butter on your pan in medium heat.
5. Place your treats into the pan and cook until they turn gold on both sides.
6. Sprinkle some powdered sugar on top and serve!

Zuppa Tuscana


A hearty soup that will keep you warm during the winter! 

Ingredients (6- 8 servings):
1 lb spicy italian sausage ( I purchased mine from Wegmans)
2 large potatoes, diced
1 chopped yellow onion
2-4 garlic cloves, minced
Chopped Tuscan kale (amount varies, depends on how much you like in your soup)
One quarter container of chicken broth ( I got mine from Trader Joe's)
1 cup of milk
1 cup of half and half
All purpose flour

Directions:
1. Slice the uncooked italian sausage, onion, garlic
2.Brown italian sausage in medium high heat
3. Place onion and garlic to the pan and let it cook for a bit
4. Add in the diced potatoes
5. Season with salt, pepper and garlic powder
6. Simmer for about 10 mins on medium heat
7. Add in the milk and half and half
8. Simmer for about 5-10 mins
9. Add kale
10. To thicken the soup to the right consistency you want, mix flour with some of the soup in a separate bowl until you have formed a thick paste.
11. Pour the thick paste back into the pot.

Suggestion: 

You can add bacon bits to the recipe for a nice meaty crunch
